Peppermint meringues11/12/2023 ![]() Put the egg whites and sugar in a heatproof bowl and set over the simmering water. I know there are dozens of versions of meringues available on the internet, but I wanted to a recipe that I knew I could count on. In a saucepan, bring 1 to 2 inches (2.5 to 5 cm) of water to a simmer. The recipe I used comes from my friend Amanda at i am baker. Consuming raw or undercooked eggs may increase your risk of foodborne. Oh well! I know there are LOTS of other people who do love them! To ensure food safety, eggs should be cooked until both the yolk and the white are firm. Stir frequently until sugar is dissolved. Place egg whites and sugar in the bowl of a stand mixer and place over a pot of simmering water. They were a new experiment, but I was the only one who liked them. Use a paint brush to lightly brush red and green food coloring in stripes up the sides of a piping bag fitted with a star tip. ![]() Peppermint extract is then added in before the meringue is transferred to a piping bag and piped onto a lined sheet pan.
